TUCSON - Today on "Let's Make a Meal," Chef David Mattias from Mosaic Café stopped by to make:
3-4 medium gray squash, quartered lengthwise and chopped
1/2 cup yellow onion, small diced
1/2 cup tomatoes, small diced
1/2 cup sweet corn kernels
1 garlic clove minced
2 tsp olive oil
1 cup of cheddar cheese, cubed or grated
Salt pepper and mexican oregano to taste
In a medium sauté pan heat oil to med- hi then sweat onions until translucent. Add garlic and stir until aroma is present. Then add the squash, salt, pepper and mexican oregano and allow to cook for 5-10 minutes. Add tomatoes and corn and allow to cook for 5 minutes longer. Stir in the cheese before serving.
