Kitchen Cops: Inpsectors discover unique tenderizing technique

Tucson- Two restaurants fell short of the excellent expectations of Pima County Health Inspectors this week.

They each received several critical violations but topping the list was an asian barbeque that has a very unique way of preparing it's meat.

Nan Tian BBQ, at 1990 W. Orange Grove, received seven critical and five non-critical violations. The inspector observed a 10 inch wooden block with screws protruding from one end. He was told it was used to tenderize meat. Raw pork and raw duck were found thawing in standing water in a sink. Cooked pork belly hanging in a walk-in was seen resting against a wire rack with rust and food debris. A blender and kitchen utensils had accumulation of grease and food debris on them. Excessive build up of soil and debris was observed on walls, floors and equipment.

With more than four critical violations not corrected during the inspection, Nan Tian BBQ was given a "Provisional" rating.

Jethro's Cafe, at 8735 E. Broadway Blvd., received 4 critical violations. A waitress was observed bussing tables, handling money, handling clean dishes and then serving customers without washing her hands. There is no hand sink in the wait area. The restaurant has been instructed to install a sink within 10 days. A meat slicer was observed with dried food debris on the blade. Several food items in a refrigeration unit were not date marked. With the violations not corrected during the inspection Jethro's Cafe received a "Needs Improvement" rating.

Restaurants awarded excellent ratings include, R-Place Bar & Grill at
3412 N. Dodge, Pappoules at 4500 N. Oracle and Elbow Room at 1145 W. Prince.
