Guacamole from Blanco Tacos & Tequila

Here is what you need:


Avocado 2.50 lb
Roasted Poblano 1.00 oz
Roasted Anaheim 1.00 oz
Roasted Jalepeno 1.00 oz
Carmelized Onion 1.50 oz
Chopped Garlic 0.25 oz
Cilantro 0.25 oz
Salsa 1.50 oz
Salt 0.50 oz
Ground Black Pepper 1.00 pinch
Lime Juice 0.75 oz
Sour Cream 1.50 oz





METHOD

1. weigh all ingredients on a digital scale, transfer to a stainless bowl and working from
center of bowl inward mash all of the avocado with a wire whisk until there are no chunks
larger than 1/2".
2. stir until all ingredients are evenly combined. Hold for no more than 2 hours.
