Gourmet Girls gluten-free pork quesadilla

Gluten Free BBQ Pork Quesadilla
4 Gluten Free Tortillas, preferably uncooked
2 Cups Pulled Pork
½ c Barbecue Sauce, plus 1 cup more for dipping
8 Strips All Natural Bacon, coarsely chopped
1 Cup Shredded Cheddar Cheese
Saute Bacon until crisp and drain fat from pan. Add pork to bacon and warm through,
adding barbecue sauce to heat. Place tortillas one at a time in a separate pan, or on a
griddle. Cook on one side and flip over. Divide Pork mixture equally between tortillas,
add divided cheese and heat until the cheese melts. Fold tortilla in half, slice in thirds
and serve with extra barbecue sauce.
