Gluten-free quiche from Gourmet Girls

Gourmet Girls Gluten Free Quiche

Crust:
1 ¼ c all purpose gluten free flour blend
1 T sugar
½ tsp xanthan gum
¼ tsp salt
6 T cold unsalted butter cut into six pieces
1 egg
1 tsp vinegar
1 tsp water

  • Fix flour, sugar, xanthan gum and salt in large bowl of electric mixer
  • Add butter and blend until crumbly.
  • Add egg, vinegar and water
  • Mix on low speed until dough holds together
  • Form into a ball and place between two sheets of plastic wrap
  • Roll out dough, remove top sheet of plastic and fit into pie pan.

Quiche Filling:
6 eggs
1 c heavy cream
½/ c milk
¼ tsp each salt and pepper
1/8 tsp nutmeg
10 cherry tomatoes
2 c spinach leaves
¾ c crumbled feta cheese
Place spinach in unbaked pie shell, top with cherry tomatoes sliced in half and crumbled feta. Mix
eggs, cream, milk and seasonings together

30-40 minutes or until set in the center.
