¼ Cup Crumbled Cooked Sausage

1 T diced green chilis
¼ c diced Tomatoes
¼ c shredded cheddar and mozarella combined

4lb. 4oz Rice Flour
1lb 12 oz Potato Starch
1lb 4oz tapioca
1lb 3 oz garfava bean flour
¼ c xanthan
¼ c baking powder
6 c shortening
15c hot water
Combined all dry ingredients, then cut in shortening. Add hot water, combine until a soft cohesive dough is formed.
1 tortilla = 4oz.
