Chorizo stuffed dates
1 lbs thick cut bacon
1/2 lbs chorizo
1 large package of dates de-seeded
1 bottle red wine
Place red wine in small pan and bring to a simmer to reduce until you have a thick and sweet liquid.
Cut the bacon in half
Fill each date with as much chorizo as it will hold and then wrap with bacon.
These can be baked for 20 mons in a 350 degree oven or until bacon is crisp.
Place on serving tray and drizzle red wine reduction over the dates, then enjoy
