Calabacita Street Tacos (yields 4)
Diced zucchini 1/2 ounce
Diced squash 1/2 ounce
Diced tomato 1/2 ounce
Diced onion 1/2 ounce
Roasted tomato with bell pepper 1/2 ounce
Sour cream 1/4 ounce
Margarine 1/2 ounce
Salt, pepper and garlic- season to taste
Corn masa 4 oz (or use 4 inch corn or flour tortillas)
Refried beans (you can substitute canned)
Casero cheese and cilantro to garnish
In a hot pan, sautée zucchini and squash with margarine. Cook approximately for one minute. Add caramelized onion and corn mix to the pan, sautée for 30 to 40 seconds. Slowly stir in sour cream and diced tomato. Season with salt, pepper and garlic. Remove from heat.
Heat masa/tortillas then smear each with refried beans. Top with calabacita mix and garnish with case to cheese and cilantro.
