TUCSON - Just in time for St. Patrick's Day, Mulligan's Sports Pub has come up with a tasty treat. In today's Let's Make a Meal, here's a yummy cake. Enjoy!
Chocolate Guinness Cake with Bailey's Irish Cream Cheese Frosting:
1-1/2 cups Guinness dark beer
1-1/2 cups unsalted butter
1 cup dutch-process cocoa powder
3 cups all purpose flour
3 cups granulated sugar
2-1/4 tsps baking powder
1 tsp salt
2/3 cups sour cream
Preheat oven to 350. Grease and flour two 9 inch cake pans and line with parchment paper circles
Place beer and butter in a large heavy sauce pan and heat until butter is melted. Remove from heat and add cocoa powder. Whisk
until mixture is smooth. Set aside to cool to room temp.
Whisk together flour, sugar, baking powder and salt in large bowl and set aside.
In large mixing bowl, beat together eggs and sour cream. Add beer/cocoa mixture, mixing to combine. Add flour mixture and mix
together at a slow speed. Scrape the sides and bottom of the bowl and mix again 1 minute.
Divide batter equally among pans. Bake for 35 minutes. Remove cakes from oven and cool on rack for 10 minutes before turning
cakes out of their pans and returning to racks to finish cooling completely before frosting.
16 oz cream cheese - room temp
1/2 cup butter - room temp
1 tbs Bailey's Irish Cream
6 cups powder sugar
In a mixing bowl, blend together cream cheese, butter and Irish Cream on medium speed until smooth and combined. Gradually add
the powder sugar on med - low speed until it has all been added. Increase the speed to med - high and beat until smooth and
thoroughly mixed. Use immediately.
